Healthy Zucchini Bread

Ingredients

·      1 ¾ cups whole wheat flour

·      ½ tsp Himalayan salt

·      1 tsp baking soda

·      1 tsp cinnamon

·      ¼ tsp nutmeg

·      ½ cup coconut sugar

·      2 eggs

·      ¼ cup unsweetened almond milk

·      1/3 cup coconut oil (melted)

·      1 tsp vanilla extract

·      ½ cup chopped walnuts

·      1 ½ cup shredded zucchini

 

Directions

1.     Preheat oven to 350F.

2.     Mix flour, salt, baking soda, cinnamon, nutmeg, and coconut sugar together in a bowl.

3.     Mix eggs, almond milk, coconut oil, and vanilla extract together in a separate bowl.

4.     Combine the two mixtures together.

5.     Add the chopped walnuts and shredded zucchini to the mixture.

6.     Place in a cake pan and bake for 50 minutes.

7.     Enjoy!
