Lemon Squares
Crust Ingredients
· 1 cup oat flower
· ¼ cup coconut oil (melted)
· ¼ cup honey
Filling Ingredients
· 5 eggs
· ½ cup honey
· ½ cup lemon juice (freshly squeezed)
· 1 tbsp lemon zest
· 1/3 cup oat flour
Directions
1. Preheat oven to 350F and line a deep baking pan with parchment paper.
2. Mix all crust ingredients together and press onto the bottom of the baking pan.
3. Place in the oven for 10 minutes, then set aside to cool.
4. Whisk all filling ingredients together (mixture should be runny) and pour over the crust
5. Place in the oven for 20-25 minutes (until the filling sets).
6. Remove from oven and let it cool. Place in the fridge for 3-4 hours.
